Cuina Volcànica association was set up in 1994 by a group of enthusiastic restaurant owners who have consolidated a cuisine based on the deep-rooted culinary traditions of Garrotxa County.

They believe in the need for representing, defending, and promoting their volcanic territory and its food industry, and using artisan products grown, bred, and produced locally. They have developed a cuisine to suit all tastes, a daring, creative county-based project using traditional local recipes, which encourages interest in the culinary curiosities of the area.
